Canning your own food.

Looking into our kitchen this morning I see lots of carrots and beets to can, as well as some salsa we canned up yesterday.   What I like most about canning our own food is you know what is in it.  You put the flavor you want into it and know where the fruits and vegetables came from.  There are so many different recipes that a beet can be butter beets, Harvard beets or beet pickles.  Have you ever found a beet pickle in the store?  I haven't yet.
